Last week we talked about dollhouses, which are certainly a memory-making gift to build and to receive. But how about something a little quicker, tastier and ephemeral to make? Something with fragrance... with spice.  

Of course we mean gingerbread houses. I love gingerbread houses and cookies. When these treats are baked, the entire house is filled with the scent of Christmas. If you've been outside and walk in, the aroma of ginger and warm spices will greet you as you open the door.

Did you grow up with the smell of gingerbread in your home? My mom used to make her own dough and decorate the houses with royal icing and other embellishments, as well as making trees. She loved to decorate cakes, so it was easy for her to transition to gingerbread houses during the holiday season. They were different each year - sometimes candies like Smarties and jelly beans were used to add colour. Other versions were created without candies. My siblings and I loved taking the houses apart and eating them.

I've never made my own gingerbread house, but would love to try. Wouldn't it be a delight to see one in the window of the Figg Street Co. shop?  

If I made one, I'd create a minimalist version without candy embellishments. I'd use icing to create lots of ornamental flourishes on the roof and the rest of the house. Perhaps I'd sprinkle a bit of gold dust overtop of the scene and use some gold leaf because I love everything gold.

The thought of gingerbread has us considering the spicy colours within the shop. Shades of ginger and cinnamon, brown sugar, and molasses. Chocolate browns. Maple Syrup. Is it a coincidence these late autumnal colours appear in our seasonal baking?
